Bean With Bacon Soup Shawns
4 Servings
250 Gr bacon, Chopped
1 Onion, diced
1 Cup celery, Diced
1 Cup carrot, Diced
1 Tsp garlic, Minced
1 Tsp oregano, Dried
2 Tsp hot peppers (opt), Dried
3 Cup Broth (any kind)
1 1/2 Cup Stewed tomatoes
2 Cans beans, drained rinsed
In soup pot cook bacon over low / medium heat until fat is rendered
and bacon is crisp. Add onion, celery, carrot and garlic cook until
onion is softened.
Add Oregano, salt, pepper and optional hot pepper flakes, stir in.
Stir in beans, tomatoes, and broth; reduce heat to a simmer, cover and
cook for 30-60 minutes.
